I made a couple of tweaks and the encoder now seems to work. It still crashes the DSP once it's finished encoding, so I need to take a look at that (though it should be easy enough to fix as my other tasks don't do that). Then it's a case of plumbing it into Bluez. As ever, any help/thoughts appreciated.
