Search in contacts is limited to first name / last name and possibly nickname (when list configured by nickname).

Solution #1: KISS: CTRL-f opens a full-text search

Simple solution with simple UI: ctrl-f starts a full-text search, that searches in all fields. Search string is interpreted as space-separated word list and search results is all contacts that have each word in any field; not necessarily all words in the same field, different words can match different fields.
The user guide already documents ctrl-f as "open search panel (when available)", so it is natural.
Maybe also have it through an entry in the menu one gets by tapping the title bar.

A dialog similar to Mozilla Thunderbird's "search in email", which would allow to say things like
company contains nokia AND
country is France
