MaemoTeX enables you to work with the latest versions of pdflatex and metapost. As time of writing MaemoTeX contains a small but functional LaTeX-Distribution ready to work with. You need an editor to produce some text (*.tex). After saving this text, you have to open an osso-xterm and with pdflatex yourfile (with or without .tex) you'll get a pdf-document. This may be shown with the build in PDF-viewer.
