One has to plug in the headphones to use them as an antenna (explained in the About dialog). This should be made more prominent I think. // Status is not remembered as written by Thomas. // Apart from that: Awesome job, really! Big +1.

Is it possible to have a auto-scan feature that will then list all the available stations in a list?

This is planned. I'm also thinking about a simple sharing service where people can upload the stations for their area and other people in the same area will be able to download the stations list.

Also, the headphone status is not remembered (plug in headphones, switch to speaker output, remove headphones, plug in headphones, appmenu says "Headphones output", but it should say "Speaker output", as the output switches to headphones when plugged in).

Yes, headphone detection is not implemented yet. In my opinion, the output source shouldn't change but always match what the user has manually defined in the app menu.

A feature request: Record FM radio to a file while playing back (should be possible because you are already capturing and playing back the audio?)

Yes, this should be possible by extending the GStreamer pipeline a bit (class components/fmradio/SoundPipe.py). Volunteers are welcome. ;)
